The ability to run a section within the kitchen independently
Assist the rest of the kitchen team in ensuring production of high quality dishes in a fast passed environment
Liaise with the Head Chef and ensure all ordering and Mise-en-Place is completed for service

Using only fresh and local produce, the kitchen produces high quality menus in a fast paced environment for lunch and dinner, serving brasserie style food for lunch as well as something a bit more refined for the evening service, using the best produce the islands have to offer.
After recently undergoing a refurbishment and are now looking to push the restaurant to the next level. Cooking a fusion of classic French cuisine with modern English and Italian influences with classic cooking techniques. Utilising the best of produce the Channel Islands has to offer such as Oysters, Fish & Seafood – Produce so popular amongst most on the Islands – the Restaurant’s menus have proved to be a hit with local clientele.
The Restaurant provides several menus, an a la carte menu which provides a more refined style of dish whilst their Brasserie menu offers a more relaxed style of dining experience.
This is an amazing opportunity for an individual who wants to develop as a Chef de Partie in quality fresh food environment.
Ability to work under pressure

Previous experience within fresh food led establishments, preferably Rosette standard
